Sweet & Sour Pulled Pork Sliders

Ingredients
- 5 lbs boneless pork shoulder 2 tbsp Dijon mustard 6 tbsp Blueberry Haven BBQ Spice 2 large yellow onions, cut into quarters 2 c chicken broth 1 c apple juice or cider kosher salt and pepper coleslaw 24 slider buns, buttered and toasted Sweet & Sour sauce (12oz chili sauce, 12oz BH Blueberry Jam, optional 1-2 tsp hot sauce)
Instructions
- 1. Preheat oven to 300 degrees F. 2. Coat the pork shoulder with Dijon and sprinkle with the BBQ spice. 3. Place onions in the bottom of a roasting pan and set pork on top. 4. Pour in chicken broth and apple juice. Bring to a boil, cover and place in the oven for about 2 hours or until pork falls apart. 5. Remove pork, reserve braising liquid in the pan. Bring liquid to a boil, reduce by half, add s&s sauce, season with S&P. 6. Pour sauce over shredded pork. Spoon pork evenly on bottom of the buns. Top with slaw and bun tops, serve.
